Today is D and I'm talking about Dining with IC
I started this blog because mid 2017, hubby came home with the news he might lose his job. It was a shock to the system and we scrambled to see how to make ends meet. (Thankfully, he ended up keeping his job, but that was a tense two weeks.) Having IC often meant when grocery shopping I couldn't just grab the cheapest, easiest meal and be good. I was finding that the cheaper options often had trigger foods in them. Tuna was a prime example. If I wanted tuna, I had to buy the can that cost over $2.
I decided to look into meal planning, but in my search found that nothing was IC friendly. There were blogs with IC friendly recipes, but many were abandoned. That's when I decided to start this blog. I figured I could give some insight on how to meal plan when on a food restricted diet and hopefully help others with IC (or any chronic illness.)
